For hard gainers and heavy bulking phases: this is a calorie-maximum meal, not an everyday plate. Two huge baked potatoes with butter, sour cream, cheddar and bacon, next to half a kilo of seared sirloin.
Preheat the oven to 200°C (400°F) with a rack in the centre.
Scrub the potatoes, prick them all over, rub with the oil and half the salt and bake directly on the rack for 55 to 60 minutes, until a knife slides in easily.
Cook the bacon in a skillet over medium heat for 6 to 8 minutes until crisp; drain and crumble.
Season the steak with the rest of the salt and the pepper.
Heat a cast-iron skillet over high heat and sear the steak for 4 to 5 minutes per side for medium-rare, 63°C (145°F) in the centre. Rest 5 minutes and slice.
Split the potatoes, fluff the insides with a fork and load with butter, sour cream, cheddar, bacon and green onion. Serve with the steak.
