Omega-3-rich salmon, fibre-rich quinoa and broccoli, seasoned with lemon and herbs instead of salt. A meal built for good cholesterol and blood pressure.
Rinse the quinoa and add it to a saucepan with 480 ml (2 cups) of water. Bring to a boil over high heat, cover and simmer on low for 15 minutes, then rest covered 5 minutes.
Preheat the oven to 220°C (425°F) with a rack in the centre. Line a large baking sheet with parchment.
Toss the broccoli with half the oil, the garlic powder and pepper and spread on the tray.
Pat the salmon dry and lay the fillets among the broccoli. Brush with the rest of the oil and season with pepper.
Roast for 12 minutes, until the salmon flakes easily and reaches 63°C (145°F) in the thickest part and the broccoli is browned at the edges.
Squeeze the lemon juice over everything, scatter with dill and serve with the quinoa.
Tips
Lemon and herbs let you skip the salt without missing it.
