For hard gainers and heavy bulking phases: this is a calorie-maximum meal, not an everyday plate. Homemade baked tortilla chips piled with spiced beef, black beans and a pound of melted cheddar, finished with sour cream, salsa and avocado.
Preheat the oven to 200°C (400°F) with a rack in the centre. Line a large rimmed baking sheet with parchment.
Toss the tortilla wedges with the oil and salt, spread out and bake for 10 to 12 minutes, until crisp. Keep them on the tray.
Meanwhile, brown both beefs in a skillet over medium-high heat, breaking them up, until they reach 71°C (160°F), about 7 minutes. Stir in the chili powder, cumin and beans with 3 tbsp of water for 2 minutes.
Pile the beef over the chips and cover everything with the cheddar.
Bake for 5 to 6 minutes, until the cheese has melted completely.
Top with sour cream, salsa, avocado and jalapeño and eat straight from the tray.
