Ingredients

Method

  1. Bring a pot of water to a boil over high heat and cook the soba noodles for 4 to 5 minutes. Drain and rinse under cold water.

  2. Toss the noodles with the soy sauce, rice vinegar, ginger, sesame oil, sliced cucumber and green onion.

  3. Pat the tuna dry and press both sides firmly into the sesame seeds.

  4. Heat the oil in a cast-iron skillet over high heat until it smokes, about 3 minutes.

  5. Sear the tuna for 1 minute per side for a rare centre, only with sushi-grade tuna. For regular tuna, sear 3 to 4 minutes per side until it reaches 63°C (145°F) inside.

  6. Slice the tuna across the grain and lay it over the noodles.

Tips

  • Ask for sushi-grade tuna if you want it rare.
