For hard gainers and heavy bulking phases: this is a calorie-maximum meal, not an everyday plate. A heap of fettuccine in real cream, butter and parmesan sauce, topped with half a kilo of seared chicken breast.
Bring a large pot of salted water to a boil over high heat. Slice the chicken into strips and season with the salt and pepper.
Cook the fettuccine for the time on the package, about 11 minutes. Save a mug of the pasta water, then drain.
Meanwhile, melt 10 g of the butter in a large skillet over medium-high heat and sear the chicken for about 6 minutes, turning, until golden and 74°C (165°F) inside. Move to a plate.
Lower the heat to medium-low. Melt the rest of the butter, add the garlic and stir for 30 seconds, then pour in the cream and simmer gently for 2 minutes until slightly thickened.
Take the pan off the heat and whisk in the parmesan until smooth; cheese turns grainy if the sauce boils.
Add the pasta and a splash of pasta water and toss until glossy. Pile onto a large plate, top with the chicken and parsley.
