Method
If the bacon is not cooked yet, cook it in a skillet over medium heat for 6 to 8 minutes, turning, until crisp, then drain on paper towel and crumble.
Warm the tortillas for 15 seconds in the microwave or 20 seconds per side in a dry pan so they roll without cracking.
Mix the Greek yogurt and Dijon and spread it over each tortilla, leaving a 2 cm (1 inch) border.
Mash the avocado and spread it over the yogurt.
Layer the turkey slices, bacon, shredded lettuce and tomato slices in a line across the lower third of each tortilla.
Fold in the two sides, roll up tightly from the bottom and cut in half on an angle. Wrap in foil or parchment if packing for later.
Tips
- Roast a turkey breast on Sunday and slice it for the week; it is far cheaper and leaner than deli turkey.
Swaps
- Gluten-free: use gluten-free tortillas.
- Dairy-free: replace the yogurt with light mayonnaise.
Storing and reheating
Best eaten the day it is made. Wrap tightly in foil if packing for lunch.
