Dice the onion and red pepper. Drain and rinse the black beans.
Heat a large non-stick skillet over medium-high heat and spray with cooking spray.
Add the turkey sausage, onion and pepper. Break up the sausage and cook, stirring often, until browned and cooked through to 74°C (165°F), about 7 minutes.
Stir in the black beans for 1 minute to warm, then transfer the mixture to a large bowl. Wipe the pan.
Whisk the eggs and egg whites in a bowl.
Return the pan to medium-low heat, spray again and add the eggs. Stir slowly with a spatula until softly set, about 4 minutes. Take them off the heat while they still look slightly glossy; they will finish cooking in the burritos and when reheated.
Let the eggs and filling cool for 10 minutes so steam does not make the tortillas soggy.
Warm the tortillas for 20 seconds in the microwave so they fold without cracking. Lay them out and divide the eggs, sausage mixture, cheddar and salsa down the centre of each.
Fold in the two sides, then roll up tightly from the bottom. Wrap each burrito in foil.
To reheat from frozen: unwrap, wrap in a damp paper towel and microwave on high for 2 minutes, turn over and heat 1 to 2 minutes more until hot in the centre.
