Ingredients

  • Burger
  • Fries

Method

  1. Preheat the oven to 220°C (425°F) with a rack in the centre. Spread the frozen fries in a single layer on a large lined baking sheet.

  2. Bake the fries for 20 to 25 minutes, turning once halfway, until deep golden and crisp.

  3. Divide the beef into three equal balls and season generously with the salt and pepper.

  4. Meanwhile, cook the bacon in a large cast-iron skillet over medium heat for 6 to 8 minutes, turning, until crisp. Drain on paper towel and pour off all but 1 tbsp of the fat.

  5. Turn the heat to high. Add the beef balls, smash each one flat with a sturdy spatula and cook for about 3 minutes, until a deep crust forms. Flip, lay the cheddar on top and cook 2 to 3 minutes more, until the beef reaches 71°C (160°F) inside.

  6. Split the bun and toast it cut side down in the skillet for 30 seconds.

  7. Spread the bun with ketchup and mustard, stack the three cheesy patties with the bacon, onion and pickles, and serve with the fries.
