Ingredients

Method

  1. In a bowl, mix the turkey with the maple syrup, thyme, rosemary, nutmeg, salt, pepper and cayenne with your hands until evenly seasoned.

  2. Shape into 12 thin patties about 1 cm (1/2 inch) thick; damp hands stop it sticking.

  3. Heat a large non-stick skillet over medium heat and coat with cooking spray.

  4. Cook the patties in batches for about 3 minutes per side, until browned and 74°C (165°F) in the centre.

  5. Whisk the eggs, wipe the pan, spray it and scramble the eggs over medium-low heat, stirring slowly, until just set, about 4 minutes.

  6. Toast the bread and serve with the patties and eggs. Cooked patties freeze well for 3 months.
