Apple Pie Overnight Oats

Grated apple, cinnamon and a little maple make overnight oats that taste like an autumn orchard. A good fall breakfast when Quebec and Ontario apples are cheap.

Ingredients

Method

  1. Grate the apple on the large holes of a box grater, skin on; no need to peel.

  2. In a bowl, stir together the oats, protein powder, cinnamon and nutmeg.

  3. Add the milk, Greek yogurt, maple syrup and grated apple and stir well for 30 seconds, until no dry powder remains.

  4. Divide between two jars, cover and refrigerate for at least 4 hours or overnight.

  5. In the morning, stir each jar and loosen with a splash of milk if needed.

  6. Toast the pecans in a dry pan over medium heat for 2 to 3 minutes until fragrant, cool, chop and sprinkle over the oats. Eat cold or microwave for 1 minute.

Tips

  • Grate the apple with the skin on for fibre; McIntosh and Honeycrisp both work.

Swaps

  • Nut-free: swap the pecans for pumpkin seeds.
  • Gluten-free: certified gluten-free oats.

Storing and reheating

Keeps 3 days in the fridge.
