Blueberry Protein Overnight Oats

Five minutes the night before gets you a 40-gram-protein breakfast that is ready when you are. The Greek yogurt makes it thick and tangy, and the oats soften overnight without going mushy.

Ingredients

Method

  1. Use a jar or container that holds at least 500 ml (2 cups) so there is room to stir.

  2. Add the oats, protein powder, chia seeds and cinnamon to the jar and stir them together while dry; this stops the protein powder from clumping.

  3. Pour in the milk and Greek yogurt and stir well for about 30 seconds, scraping the bottom, until no dry powder is left.

  4. Gently fold in half of the blueberries with a spoon so they stay whole.

  5. Cover and refrigerate for at least 4 hours, or overnight, so the oats and chia soften and thicken.

  6. In the morning, stir again. If it is too thick, add a splash of milk (1 to 2 tbsp) and stir.

  7. Top with the remaining blueberries. Eat cold, or microwave on high for 60 to 90 seconds, stirring halfway, if you prefer it warm.

Tips

  • Use frozen wild blueberries: they bleed purple through the oats and taste sweeter.
  • Make four jars on Sunday; they keep until Thursday.

Swaps

  • Gluten-free: use certified gluten-free oats.
  • Dairy-free: soy milk, a dairy-free yogurt and a plant protein.

Storing and reheating

Keeps 4 days covered in the fridge. Eat cold or microwave 1 minute.
