Saskatoon Berry Skyr Parfait

Saskatoon berries taste like a nuttier blueberry and grow all over the Prairies. Layered with skyr and granola they make a proud, high-protein parfait (blueberries work too).

Ingredients

Method

  1. If using frozen Saskatoon berries or blueberries, thaw them for 10 minutes or warm for 30 seconds in the microwave so they release some juice.

  2. Spoon half the skyr into a glass, add half the berries and a little of the granola.

  3. Repeat the layers and drizzle with the maple syrup. Add the last of the granola just before eating so it stays crunchy.

Storing and reheating

Assemble up to a day ahead without the granola.
